I love the combination of pear and gorgonzola in salads and pizzas, so I put it in a quiche and it makes a lovely brunch dish.1 1/2 pears, thinly sliced
1/3 C. gorgonzola or bleu cheese, crumbled
1-2 shallots, thinly sliced
4 large eggs 1/4 C. cream 2 tsp. sea salt 2 tsp. freshly ground pepper refrigerated pie crust
Whisk eggs, cream, salt and pepper. Mix in sliced shallots and crumbled gorgonzola. Place pie crust in a 9-inch pan. Pour in egg mixture, add pear slices in whatever design you wish. Bake at 350 degrees for 25 minutes.
